When the cherries are ripe, farmers bring them to stations like Sodu to be sorted and processed together. About the Region and Ethiopia

Guji, Ethiopia. Sodu is a washing station in the highlands of Guji, a richly forested region in southern Ethiopia. Until the early 2000s, this area was part of Sidama, but it’s since come into its own—known for its deep red soil, towering elevations, and coffee that stands apart.

Ethiopia holds a unique place in the coffee world—not just as the origin of Arabica, but as a place where coffee has been part of everyday life for generations. It wasn’t introduced through colonization. It wasn’t pushed as a cash crop. It’s just… always been there. And that legacy comes through in every cup.

This lot is a natural process, meaning the cherries are dried whole. After harvesting, they’re hand-sorted for ripeness, rinsed clean, and then laid out on raised beds to dry in the sun. Depending on the weather, drying takes anywhere from 8 to 25 days, with constant turning to make sure everything’s just right.
