This coffee is decaffeinated using the Ethyl Acetate (EA) method, a naturally derived process that preserves flavor while gently removing caffeine. Ethyl acetate is an organic compound found in fruits like bananas and formed during sugar fermentation.

To begin, green coffee is carefully sorted and lightly steamed to open the beans’ pores. The coffee is then immersed in a water-based solution with ethyl acetate, where the compound selectively bonds with caffeine and removes it over several hours. Once the caffeine is fully extracted, the beans are steamed again to eliminate any remaining traces of ethyl acetate.

The result is a clean, thoughtfully processed decaf that maintains the coffee’s original character—full flavor, minimal intervention, and no shortcuts.

Actually, it’s not just something—it’s many things. Colombia is one of the most recognized coffee origins in the world, yet saying a coffee is “from Colombia” only tells a fraction of the story. It’s like recommending a book by naming the publisher alone. To truly understand Colombian coffee, you have to look closer—across regions, elevations, varieties, and the people who cultivate it.

 

Hulia

Located in southwestern Colombia, Huila is nestled in-between the Central and Eastern ranges of the Andes, with the middle area called the Magdalena Valley. The variation in elevation results in Huila being one of the country's most unique and complex regions of coffee production. Its terroir, climate, and harvest cycles all contribute to the quality of coffee produced here. The most impressive quality behind the coffees coming out of Huila lies in the people producing them. While Huila accounts for nearly 20% of the country's production, 80% of coffee producers operate on less than three hectares.
